The results of Barry Callebaut’s “Discovering Chocolate” hands-on, three-day course held at the Chocolate Academy.
In the course we covered tempering, molding, enrobing while working on ganaches, bonbons, and confections. It was an incredible experience covering a breadth of techniques and the artistry of chocolate confections.
